Ingredients

  • 3 medium Ripe Plantains
  • 2 cups Brown Beans (cooked)
  • 0.25 cup Palm Oil
  • 1 medium Onion
  • 1 medium Red Bell Pepper
  • 0.5 Scotch Bonnet Pepper
  • 0.5 cup Smoked Fish (flaked)
  • 1 tbsp Crayfish Powder
  • 1 tsp Salt
  • 1 cup Water

Instructions

  1. 1Peel the plantains and cut them into 1-inch chunks.
  2. 2Heat the palm oil in a large pot over medium heat. Add the chopped onion and red bell pepper and sauté until softened.
  3. 3Add the scotch bonnet pepper and cook for another minute.
  4. 4Add the plantain chunks, cooked brown beans, flaked smoked fish, crayfish powder, and salt to the pot. Stir well.
  5. 5Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the plantains are tender and the sauce has thickened.
  6. 6Serve the plantain and beans pottage hot.
