Colombian Plantain Soup (Sopa de Platano)

Ingredients

  • 3 large Ripe plantains
  • 6 cups Vegetable broth
  • 1 medium Onion
  • 1 medium Bell pepper
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Cilantro

Instructions

  1. 1Peel and chop the plantains into small pieces.
  2. 2Heat olive oil in a large pot over medium heat. Add chopped onion, bell pepper, and garlic and sauté until softened.
  3. 3Add plantains and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until plantains are very tender.
  4. 4Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup to a regular blender and blend until smooth.
  5. 5Season with cumin, salt, and pepper.
  6. 6Garnish with fresh cilantro before serving.
