Ingredients

  • 3 cups Shredded Coconut
  • 1 cup Granulated Sugar
  • 1/2 cup Water
  • 1 tsp Vanilla Extract

Instructions

  1. 1In a large pan, combine the 3 cups shredded coconut, 1 cup granulated sugar, and 1/2 cup water.
  2. 2Cook this mixture over medium heat, stirring constantly, for about 5 to 7 minutes, until it thickens and the 1 cup granulated sugar dissolves completely.
  3. 3Continue cooking the mixture over medium heat, stirring frequently, for another 10 to 15 minutes. Watch for it to turn a golden brown color and form a sticky mass.
  4. 4Remove the pan from the heat. Stir in the 1 tsp vanilla extract until it is fully combined.
  5. 5Carefully spread the hot coconut mixture onto a baking sheet lined with parchment paper. You can grease the parchment paper with a neutral oil if you have one, but it is not required. Ensure the mixture is spread evenly.
  6. 6Let the mixture cool completely on the parchment paper for at least 30 minutes. This allows it to firm up so you can cut it.
  7. 7Once completely cool, cut the candy into squares or your desired shapes using a sharp knife.
