Coconut Candy (Nigerian)

Sweet and chewy coconut candy, a popular treat in Nigeria, made without peanuts.

Ingredients

  • 2 cups Shredded Coconut
  • 1 cup Granulated Sugar
  • 1/2 cup Water
  • 1 tsp Vanilla Extract

Instructions

  1. 1In a medium saucepan, combine the 1 cup of Granulated Sugar and the 1/2 cup of Water. Place the saucepan over medium-high heat and bring the mixture to a boil. Stir occasionally until the sugar is completely dissolved and the syrup has thickened slightly, which should take about 5 minutes. The syrup should coat the back of a spoon.
  2. 2Add the 2 cups of Shredded Coconut and the 1 tsp of Vanilla Extract to the saucepan. Stir constantly over medium heat for about 10-15 minutes. Continue stirring until the coconut is evenly coated and the mixture begins to dry out and clump together. You will see the mixture start to pull away from the sides of the pan.
  3. 3Remove the saucepan from the heat. Carefully spread the hot coconut mixture onto a baking sheet. You can grease the baking sheet with a small amount of neutral oil if you have one, but it is not essential. Allow the mixture to cool completely for at least 30 minutes, or until it is firm to the touch.
  4. 4Once cooled, cut the coconut candy into 1-inch squares or rectangles using a sharp knife. Serve the candy immediately.
