Ingredients

  • 2 cups Masa Harina (pre-cooked corn flour)
  • 2 cups Warm Water
  • 1 teaspoon Salt
  • 2 medium Avocado
  • 1 tablespoon Lime Juice
  • 1/4 cup Red Onion
  • 2 tablespoons Cilantro
  • 2 tablespoons Olive Oil

Instructions

  1. 1In a large bowl, combine the masa harina, warm water, and salt. Mix well until a soft dough forms. Let it rest for 5 minutes.
  2. 2Divide the dough into 8 equal portions and shape each portion into a flat, round arepa (about 1/2 inch thick).
  3. 3Heat a large skillet or griddle over medium heat. Add olive oil.
  4. 4Cook the arepas for about 5-7 minutes per side, until golden brown and cooked through.
  5. 5While the arepas are cooking, mash the avocado in a bowl. Add lime juice, red onion, and cilantro. Mix well and season with salt to taste.
  6. 6Top each arepa with the avocado mixture and serve immediately.
